The white pepper was first harvested as a ripe orange to reddish pepper fruits, these peppers are later washed in running water for up to 2 weeks, this process helps in soften the outer shell for easy removal, exposing the beige pepper core which is then sun dried for another week, bleaching the pepper into the white color pepper we see today.

The white pepper may not be as aromatic as black pepper but its pungency and sharpness is comparable. Use sparingly in any kind of dishes , sauces or marinates.
